Cheese is wonderful stuff. Plain old cheddar, marble and colby were the mainstays while growing up, and they are always good. Many countries in the world are famous for their cheeses. The Netherlands is known for its Gouda. They also make a variety that I especially enjoy; Frisian Clove. It has been impossible to find (at least for me) around here the last number of years. Switzerland is known for its Swiss cheese, but Ohio’s Holmes County makes Swiss Cheese that is pretty hard to beat. England’s Yorkshire Wensleydale is good too. The last number of years there are many artisanal varieties available locally and it’s almost impossible to list them all. Sampling them is an adventure of taste.
